Channel Your Inner God(dess) With This Basil Dressing

Use this for your salad or as an appetizer dip.

Toss your crisp lettuce leaves into this creamy dressing for a crowd-pleasing summer salad. Yogurt-based dressings and dips are a good way to boost your protein and stay full. 

  • 1 small clove garlic
  • 1/2 tsp. kosher salt
  • 1/4 cup fresh basil leaves
  • 1 Tbsp. champagne vinegar
  • 1/2 cup yogurt
  • 2 to 4 Tbsp. olive oil
  • 2 Tbsp. feta cheese
  • Freshly ground pepper

Place garlic clove and salt in a mortar and pestle. Smash garlic until it’s a paste. Add basil leaves and continue to pound until basil is incorporated into garlic paste.

Add champagne vinegar and continue to mix. Add yogurt and olive oil, and stir to combine. The mixture should be a creamy green. Add the olive oil and stir with a fork until you reach a salad-dressing consistency. Add feta and a crank or two of black pepper and combine. Adjust seasoning to taste.

Alternatively, you could make this dressing in a food processor or high powered blender. Simply combine all the ingredients and blend until you reach the desired consistency.
